Marcala sits in the cloud belt of western Honduras — a protected denomination of origin (DOP) where slow maturation, volcanic soil, and cool nights give Arabica a transparency you can taste at first sip. Lot No. 195 is grown above 1,500 m and certified SHG EP — Strictly High-Grown, European Preparation — the industry's most demanding bean-size and defect grade.
It also carries the ICO “S” quality mark for moisture and defect compliance against the international standard.

Lot 195 wants a slow ritual. Bloom for 30 seconds, then pour in three gentle pulses, letting the bed settle between each — and the highlands open up in layers, the way the Marcala mist lifts at dawn.
Honest as espresso, too: a deep mahogany extraction with caramel-rimmed crema, a finish that is fine rather than heavy.

Cherries are selected ripe, depulped, fermented, and washed (Lavado / Vía húmeda). Beans are sun-dried and rested before milling to European Preparation.
Mayacert verifies organic compliance to USDA NOP under the US-Canada equivalency arrangement. SENASA Honduras issues phytosanitary clearance — non-fumigated, free of quarantine pests.
Random samples are drawn from a representative number of bags, blended into one master sample, and split in three for cross-cupping before the consignment is sealed.
